  • Freshly frozen mackerel - 1 pc. (300 g);
  • Carrots - 1 pc. (small);
  • Onion - 1 pc. (medium-sized);
  • Potatoes - 2 medium sized tubers;
  • Rice - 0.3 cups;
  • Odorless vegetable (sunflower) oil - 50 ml;
  • Table salt - 1.5-2 tsp. (taste);
  • Lava sheet - 1-2 pcs.;
  • Black pepper peas - 3-4 pcs.;
  • Dried celery and parsley roots - 1 tbsp. l .;
  • Garlic - 1 clove (optional);
  • Fresh dill greens - several branches (for serving).

Thaw mackerel in the main compartment of the refrigerator or at room temperature, wash, gut and cut into large pieces.

Put fish in a pan, add bay leaf, peas and pieces of dried roots (can be replaced with fresh ones). Add cold water to the pan and place it on the stove without covering it. At first, you can reinforce the fire, but as soon as the liquid starts boiling, immediately reduces the heating power.

The secret of a clear fish stock is in a continuous silent boil. If the water boils, small particles of fish will spoil the broth. Cook for 20-30 minutes from the moment of boiling.
